Fritura Malagueña – Fried fish Malaga style

A Fritura Malagueña is a mixture of fried fish, typical to the province of Málaga. Usually, it is only made for two or more persons. The fish mix is served on a tray that typically contains a mix of fried calamari (fried squid), boquerones (fried anchovy), Red mullet, baby squid, Mackerel, Blue whiting, Whiting, Kingklip, Marinated dogfish, Cuttlefish and sometimes prawns. The content of a Fritura Malagueña may vary, depending on the season. It is always made with fresh fish.

  • Clean the fish well and cut big pieces into portions.
  • Dry the fish well. Water is not welcome in the oil when deep frying.
  • Add salt to the fish and leave to rest for a few minutes.
  • Cover the fish with flour and shake off the well. Fry in hot olive oil for a few minutes until the fish is golden and dry off on absorbing kitchen paper.
  • Serve the fried fish straight away to enjoy it at its best. A green salad is a perfect complement to fried fish.

Lemon, yes or no?

Some people love to sprinkle some drops of lemon over their fried fish, and others hate it. Usually, the fish is served with a piece of lemon on the plate, but the taste of the fresh fish does not need it.
