Torrijas

Torrijas are a sweet and indulgent dessert that is commonly eaten during Holy Week in Spain. Similar to French toast, Torrijas are made by soaking slices of bread in milk, then egg, before frying them up and coating them in sugar and cinnamon. It’s a simple yet delicious dish that’s perfect for satisfying your sweet tooth.

Ingredients:

1 loaf of bread (preferably a day or two old)
2 cups of milk
3 eggs
1 cinnamon stick
1 cup of sugar
Olive oil (for frying)

Instructions:

  1. Cut the bread into slices and set aside.
  2. In a saucepan, heat up the milk with the cinnamon stick. Once it starts boiling, turn off the heat and let it cool for a bit.
  3. In a separate bowl, beat the eggs and add the cooled milk. Mix well.
  4. Soak the bread slices in the milk and egg mixture for a few seconds on each side.
  5. In a frying pan, heat up some olive oil over medium heat. Once hot, add the soaked bread slices and fry until golden brown on both sides.
  6. Once fried, place the torrijas on a plate with paper towels to absorb any excess oil.
  7. Mix the sugar and cinnamon together in a separate bowl and coat the torrijas in the mixture. Drizzle honey on top if you want!

Potaje de Vigilia

This is a traditional Spanish stew that is commonly eaten on Good Friday. It’s made with chickpeas, cod, spinach, and other vegetables. It’s a hearty and filling dish that’s perfect for a big family meal. Here’s how to make it:

Ingredients:

1 pound of dried chickpeas
1 pound of cod
1 onion, chopped
3 garlic cloves, minced
1 red pepper, chopped
1 green pepper, chopped
2 tomatoes, chopped
1 cup of spinach
2 bay leaves
1 teaspoon of paprika
1/4 cup of olive oil
Salt and pepper

Directions:

  1. Soak the chickpeas in water overnight.
  2. Drain the chickpeas and rinse them.
  3. In a large pot, heat the olive oil over medium heat.
  4. Add the onion, garlic, and peppers and sauté until the vegetables are tender.
  5. Add the tomatoes, bay leaves, and paprika and cook for a few minutes.
  6. Add the chickpeas and enough water to cover them.
  7. Bring the pot to a boil and then reduce the heat to low.
  8. Simmer for about 2 hours, or until the chickpeas are tender.

Add the cod and spinach and simmer for another 10 minutes.

Season with salt and pepper to taste.

Easter eggs are a big part of Easter celebrations all over the world, and Spain is no exception. In Spain, Easter eggs are often made with chocolate and filled with surprises like small toys or candies. Here’s how to make your own Easter eggs at home:

Ingredients:

Chocolate chips or bars
Small toys or candies
Easter egg molds

Directions:

  1. Melt the chocolate in a double boiler or in the microwave.
  2. Fill the Easter egg molds halfway with the melted chocolate.
  3. Add the small toys or candies to the center of the molds.
  4. Fill the rest of the molds with the melted chocolate.
  5. Tap the molds gently to remove any air bubbles.
  6. Refrigerate the molds for about
